  1. Season the chicken wings with salt and black pepper.
  2. Add grated garlic and a little grated ginger.
  3. Pour in the mirin for sweetness. If you cannot get it, use Japanese sweet cooking sauce instead.
  4. Mix until all the seasoning coats the chicken evenly.
  5. Cover and refrigerate to marinate for at least 30 minutes, ideally up to 2 hours.
  6. For the sauce, grate the garlic into a bowl.
  7. Add the gochujang.
  8. Add 2 tablespoons of soy sauce.
  9. Add 3 tablespoons of tomato sauce for a fresh tang.
  10. Add the brown sugar and the corn syrup. If you do not have corn syrup you can use honey.
  11. Add a tablespoon of sesame oil and stir everything until combined.
  12. Coat the marinated chicken in cornstarch or potato starch with a little salt, tossing until every surface is evenly covered.
  13. Heat the oil and fry the chicken for the first time until it just starts to colour, not fully cooked through, then drain.
  14. Rest the chicken for about 10 minutes so the residual heat keeps cooking it through to the centre.
  15. Fry the chicken a second time over higher heat, turning it, until the surface is crisp and golden brown.
  16. Pour the sauce into a pan and cook over low heat, stirring, until it comes to a boil, then turn off the heat.
  17. Add the fried chicken to the sauce and toss until every piece is perfectly coated.
  18. Serve sprinkled with sesame seeds and sliced spring onion.
