Prune Swiss Roll

  1. Flatten the prunes with a meat mallet so they spread out.
  2. Preheat the oven to 180 C and prepare a 24 x 24 cm pan with paper on the base and the sides brushed thinly with butter.
  3. Melt the unsalted butter and set it aside.
  4. Crack the whole eggs and the extra yolks into a bowl, then add the SP emulsifier, salt and vanilla.
  5. Add the granulated sugar and whip until the batter is aerated, thick, pale and leaves a trail.
  6. Sift half of the cake flour, milk powder and cornstarch into the batter and fold it in.
  7. Sift in the remaining dry ingredients and fold again, cutting through the middle, until combined.
  8. Take a little of the batter and stir it into the melted butter to loosen it. Add the rum essence if you like, and mix until combined.
  9. Pour the butter mixture back into the main batter and fold until combined.
  10. Pour the batter into the pan and spread it evenly with a spatula.
  11. Tap the pan to release the air, then bake for about 11 to 12 minutes first.
  12. Arrange the prunes over the surface of the sponge and bake for another 7 minutes, for about 18 minutes in total.
  13. Turn the sponge out of the pan onto paper set on a cooling rack.
  14. Rest it for about 3 minutes so it is cool enough to handle.
  15. Spread jam thinly while the sponge is still warm. Do not go too thick or it will be hard to roll.
  16. Roll the sponge up slowly, using the paper for support.
  17. Tighten the roll with a scraper, but not too hard, then let it cool completely before slicing.
