Yellow Rice with Sweet Fried Tempeh

  1. Roughly chop 3 shallots, 2 cloves of garlic, a finger of turmeric, and 1 candlenut.
  2. Put them all into a blender.
  3. Add a little water and the juice of 1 lime so the colour stays vibrant.
  4. Blend until the paste is smooth.
  5. Heat oil in a pan and saute the spice paste.
  6. Saute until fragrant and no longer smelling raw.
  7. Pour in 480 ml of water.
  8. Add 60 ml of instant coconut milk.
  9. Bring it to the boil, then turn off the heat.
  10. Put 350 g of washed rice into the rice cooker.
  11. Bruise the ends of 3 lemongrass stalks.
  12. Slice a large thumb of galangal.
  13. Add the lemongrass, galangal, 3 to 4 bay leaves, 3 kaffir lime leaves, and a pandan leaf along with the spiced liquid.
  14. Season with 3/4 tsp of salt, 1/4 tsp of white pepper, and 3/4 tsp of stock powder.
  15. Stir until everything is evenly mixed.
  16. Cook in the rice cooker until the rice is done.
  17. Cut 1 block of tempeh into thin strips.
  18. Heat oil and fry the tempeh until it dries out a little.
  19. Lift out the tempeh and drain it.
  20. Fry 75 g of peanuts until cooked and nicely coloured.
  21. Lift out the peanuts and put them with the tempeh.
  22. Slice 7 shallots, 5 cloves of garlic, and 3 red chillies lengthwise.
  23. Heat oil and saute the shallots and garlic until fragrant.
  24. Add the chillies, kaffir lime leaves, bruised galangal, lemongrass, and bay leaves.
  25. Pour in 2 tbsp of tamarind water.
  26. Add 6 to 7 tbsp of sweet soy sauce and 1 tbsp of sliced palm sugar.
  27. Season with 1/2 tsp of salt, 1/4 tsp of stock powder, and 1/8 tsp of pepper.
  28. Add the fried tempeh and peanuts and toss until coated in the sauce.
  29. Taste and add more salt or soy sauce if needed.
  30. Keep cooking until the tempeh dries out slightly and the sauce turns sticky.
  31. Fluff the cooked yellow rice and remove the bay leaves, lemongrass, and galangal before serving.
