Black Glutinous Rice Chiffon Cake

  1. Prepare an ungreased 20 cm chiffon tube pan and preheat the oven to 160 C.
  2. Whisk the egg yolks with the granulated sugar, salt and vanilla extract until the sugar dissolves and the mixture is lightly emulsified.
  3. Add the coconut milk and vegetable oil and stir until combined.
  4. Sift the black glutinous rice flour, low protein flour and baking powder into the batter.
  5. Stir until the batter is completely smooth and lump free, then set it aside.
  6. Put the egg whites in a scrupulously clean bowl and add the lime juice.
  7. Whip until half aerated, then add the granulated sugar a little at a time.
  8. Keep whipping until the meringue holds soft peaks. Do not take it to stiff peaks or it will be hard to fold in.
  9. Stir about a quarter of the meringue into the yolk batter to match the textures.
  10. Loosen the remaining meringue so there are no lumps.
  11. Pour the yolk batter into the meringue and fold gently, cutting through the middle so everything combines evenly.
  12. Pour the batter into the chiffon pan and smooth the top.
  13. Hold the centre tube and tap the pan to release trapped air.
  14. Bake at 160 C with top and bottom heat for about 55 to 60 minutes.
  15. As soon as it is done, invert the pan immediately and leave the cake until completely cold so it does not sink.
  16. Run a very thin knife tightly along the sides, base and centre tube to release the cake.
