Steps

  1. Prepare a bowl and add 170 gr of wheat flour, 10 gr of cornstarch, and 10 gr of milk powder.
  2. Sift the dry ingredients to make sure there are no lumps.
  3. Add 1/4 tsp of salt then stir until evenly combined.
  4. Add 120 ml of coconut milk; I use 1 packet of instant coconut milk of 65 ml topped up with water to a total of 120 ml.
  5. Add 120 ml of cooking oil and 1 tsp of pandan paste.
  6. Stir starting from the centre until evenly combined and the batter is smooth so it does not clump.
  7. Add 8 egg yolks then keep stirring until evenly combined and smooth; strain the batter if it still feels lumpy.
  8. Prepare another bowl and add 8 egg whites and 1 tbsp of lime juice.
  9. Beat at maximum speed for about three to four minutes until soft peaks form.
  10. Once the whites start to foam, add 175 gr of granulated sugar gradually in three additions.
  11. Once the whites reach soft peaks with a fine texture and a hook when lifted, turn off the mixer and do not overmix.
  12. Add the egg white mixture into the yolk batter gradually, a little at a time.
  13. Fold gently from the bottom up so the batter does not deflate.
  14. Continue folding with a spatula to make sure the batter is evenly combined.
  15. Prepare a 23 cm chiffon tin and pour the batter into it.
  16. Tap the tin a few times so trapped air can escape, then smooth the batter with a spoon or spatula.
  17. Preheat the oven for about 10 minutes, then put in the tin of batter on the lowest rack.
  18. Bake at 180 degrees Celsius with top and bottom heat for 20 minutes.
  19. After 20 minutes, when the surface starts to dry and turn brown, take the tin out of the oven and score the top with 4, 6, or 8 slashes as you prefer.
  20. Bake again at 180 degrees Celsius with top and bottom heat for about 30 minutes or until the surface is browned.
  21. Once the surface is browned, switch the setting to bottom heat only, then bake for about another 40 minutes or until the cake is done.
  22. After about 90 minutes of baking in total, when the cake is done, take the tin out of the oven.
  23. While still hot, immediately invert the tin and prop it on a bottle, then leave it until the cake is completely cool.
  24. Once the cake is cool, run a thin knife around the edge, then turn the cake out of the tin.
