Vanilla and Chocolate Marble Chiffon Cake

  1. Preheat the oven to 160 C with top and bottom heat and prepare an ungreased 20 cm loose bottomed chiffon tube pan.
  2. For the vanilla batter, whisk the egg yolks with the sugar, salt and vanilla until slightly thickened and full bodied, not aerated.
  3. Whisk in the liquid milk and the vegetable oil until combined.
  4. Add the low protein flour and the baking powder and stir just until no dry flour remains, then set the batter aside.
  5. For the chocolate batter, put the dark chocolate, liquid milk and oil in a bowl and microwave briefly until the chocolate melts, then stir until smooth.
  6. Let the chocolate mixture cool until it is no longer hot, then stir in the egg yolks until combined.
  7. Add the low protein flour and the baking powder and stir until smooth so the batter looks like a chocolate paste.
  8. Put the 6 egg whites in a clean bowl with the lime juice and whip until foamy.
  9. Add the sugar gradually and keep whipping until the meringue holds stiff peaks.
  10. Weigh the meringue and divide it into two equal portions.
  11. Fold a quarter of the first portion of meringue into the vanilla batter to match the textures, then fold in the rest with a folding motion, cutting through the middle so nothing settles at the bottom.
  12. Do the same with the second portion of meringue and the chocolate batter until no meringue streaks remain.
  13. Pour the two batters into the pan in alternating layers, roughly three additions of each.
  14. Swirl a chopstick or skewer through the batter a few times to create the marble pattern, but do not overmix or the colours will blend.
  15. Tap the pan on the counter to release the air bubbles, then bake for about 55 to 60 minutes.
  16. As soon as the cake comes out of the oven, invert the pan and prop it up so air can circulate underneath, then leave it until completely cool.
  17. Run a thin knife closely along the sides and the base of the pan to release the cake, then turn the chiffon out.
