One Bite Nutella Marble Cake

  1. Butter the base of a 22x22 cm square tin 4 cm deep, leaving the sides bare, then line it with baking paper.
  2. Separate the eggs: put the whites of 4 eggs into the mixing bowl, and set aside 6 yolks.
  3. In another bowl, beat 100 g butter with 100 g margarine on high speed until light, pale and fluffy.
  4. Add the egg yolks one at a time while beating on medium speed.
  5. Once all the yolks are in, stop the mixer.
  6. Sift 15 g milk powder, 10 g cornstarch and 115 g flour straight into the batter, then fold until evenly combined.
  7. Whip the egg whites with 1/2 tsp cream of tartar on medium speed until plenty of foam has formed.
  8. Add 130 g icing sugar gradually.
  9. Whip to stiff peaks, so the peak stands straight and sharp without flopping over when you lift the whisk.
  10. Fold a third of the meringue into the butter batter until combined.
  11. Fold in another third of the meringue until combined.
  12. Add the rest of the meringue and fold until evenly combined.
  13. Spoon a little batter into two separate bowls, colour one with mocha paste and the other with chocolate paste, then mix well.
  14. Spoon the plain batter into the tin first, then alternate with the mocha and chocolate batters however you like.
  15. Dot 125 g Nutella evenly across the whole tin so every slice gets some.
  16. Add the rest of the batter and the rest of the Nutella.
  17. Swirl a marble pattern through the batter with a chopstick.
  18. Bake at 170 degrees Celsius with top and bottom heat for 25 minutes or until done.
  19. Turn the cake out of the tin while it is still hot.
  20. Once it is no longer hot, cut it into 36 small one bite pieces.
