Kue Lupis, Steamed Glutinous Rice Parcels with Palm Sugar Syrup

  1. Wash the glutinous rice three times, then soak it in water for 2 hours.
  2. Drain the rice thoroughly until no water is left.
  3. Stir the pandan paste and a little salt into the rice until the colour is even.
  4. Soften the banana leaves by passing them briefly over a low flame on both sides until they turn pliable.
  5. Fold a banana leaf into a triangular cone, making sure the point is completely sealed so nothing leaks.
  6. Fill the cone with rice, not too full, and level it off.
  7. Fold the sides in along the triangle as tightly as you can, then snip off any excess leaf.
  8. Lock the parcel closed with a toothpick.
  9. For the sauce, cook the sliced palm sugar with the water, salt and a pandan leaf until it boils and the sugar dissolves.
  10. Strain the palm sugar sauce and let it cool completely so it thickens.
  11. Boil the parcels with pandan leaves over low heat for 1.5 hours. Check the water every half hour so it does not boil dry and burn.
  12. Mix the grated coconut with a generous amount of salt.
  13. Spread the coconut on a plate and steam it over low heat for 10 minutes.
  14. Lift the cooked parcels out and drain them.
  15. Let the parcels rest for 10 to 15 minutes before unwrapping so the rice firms up.
  16. Unwrap the banana leaves and roll each lupis in the steamed coconut.
  17. Serve with the palm sugar sauce poured over.
