  1. Mix the high protein bread flour with the instant yeast and the lemon zest for about 45 seconds to a minute.
  2. Add the milk powder, granulated sugar and salt and mix briefly.
  3. Crack in one egg, then pour in the cold milk a little at a time while mixing.
  4. Add the room temperature unsalted butter and mix on low speed, then raise the speed once it is incorporated.
  5. Knead until the dough is smooth and elastic. For rolled breads like this, keep the dough drier than a normal sweet dough so it rolls up neatly.
  6. Round the dough, cover it, and rest for 30 minutes. If you have time, chill it for about an hour, which makes rolling much easier.
  7. For the filling, rub the castor sugar together with the lemon zest using a fork until the lemon oils are released and mixed through.
  8. Roll the dough into a rectangle about 44 to 48 cm long.
  9. Brush butter over the whole surface of the dough.

  19. Pour the glaze over the rolls once they are no longer hot.
  20. Sprinkle lemon zest over the top to finish.
