Palmiers with Rough Puff Pastry

  1. Mix the medium protein flour with the salt until combined.
  2. Add the cold unsalted butter, cut into small cubes.
  3. Cut the butter into the flour with a pastry cutter until it looks like sand with small chunks of butter still visible. Do not use your hands or the butter will melt.
  4. Add the ice water a little at a time, mixing only until the dough comes together. Do not overwork it.
  5. Wrap the dough in plastic, flatten it, and chill for 30 minutes.
  6. Roll the dough into a square of even thickness, then fold it the way you fold clothes. That is the first fold.
  7. Chill again for 20 to 30 minutes so the dough cools down and the gluten relaxes.
  8. Roll the dough into a rectangle and give it a single fold, then chill for another 20 minutes.
  9. Repeat the rolling and single fold once more for the third fold, then chill again.
  10. For the fourth fold, roll the dough out, scatter plenty of granulated sugar over the middle and roll lightly so the sugar sticks, then give it another single fold.
  11. Chill for 20 to 30 minutes.
  12. Roll the dough out lengthways to about 3 to 4 mm thick with sugar underneath, then trim the sides neatly with a knife.
  13. Scatter plenty of granulated sugar over the surface and roll lightly so the sugar presses into the dough.
  14. Fold the dough in half to mark the centre, open it back out, then fold each side in to meet in the middle leaving a small gap.
  15. Fold it in half once more so it forms a log, then coat the whole surface with sugar.
  16. Freeze for 20 to 30 minutes until the log is firm.
  17. Preheat the oven to 180 to 190 C with top and bottom heat.
  18. Slice the log about 1 to 1.5 cm thick with a sharp knife.
  19. Arrange the slices on a tray with plenty of space since they spread, then open the top of each slice while holding the base so it takes a heart shape.
  20. Bake for 10 minutes, then flip each one like a pancake and bake for another 10 minutes until the sugar caramelises evenly.
  21. Take them out and let them cool so they crisp up properly.
