  1. Mix the room temperature butter with the caster sugar, salt, and vanilla until creamy.
  2. Add the medium protein flour and mix until it forms one dough.
  3. Roll the craquelin dough out between sheets of baking paper to about 1 to 1.5 mm thick.
  4. Freeze the sheet until half frozen, then cut out small rounds with a ring and freeze them again until solid.
  5. Bring the milk, water, butter, sugar, and salt to a rolling boil in a pot.
  6. Lower the heat, add the medium protein flour, then cook for about a minute until the dough dries and pulls away from the pan.
  7. Transfer the dough to a bowl and let it cool until only lukewarm, then stir in the vanilla.
  8. Add 110 g of egg one at a time, mixing until the dough is smooth and holds its shape.
  9. Transfer the choux dough to a piping bag fitted with a 1 cm plain round tip.
  10. Cook the corn syrup, butter, caster sugar, and salt in a pot until everything melts, then turn off the heat.
  11. Sift the medium protein flour into it and stir until combined, then let it cool slightly and transfer it to a piping bag.
  12. Preheat the oven to 180 to 190 degrees and mark small guide circles on the silicone mat with flour.
  13. Pipe small mounds of choux dough onto the mat, spacing them well apart.
  14. Place a frozen craquelin round on top of each mound.
  15. Pipe the caramel mixture generously over the top so it melts and covers the puff in the oven.
  16. Bake for about 25 minutes until golden.
  17. Let the puffs cool completely on the tray so the caramel sets.
  18. Whip the cold whipping cream to soft peaks.
  19. Loosen the cold pastry cream with a mixer until creamy, then fold in the whipped cream in two additions.
  20. Transfer the diplomat cream to a piping bag and chill it until cold.
  21. Poke a hole in the bottom of each puff and fill it with the cream.
