  1. Chop the onion and garlic, and dice the potato and carrot small so they cook quickly.
  2. Heat a little oil and saute the onion until lightly browned and translucent.
  3. Add the garlic and cook only briefly until done, without letting it burn.
  4. Add the minced meat and cook until it changes colour.
  5. Add the diced potato and carrot.
  6. Pour in 360 ml of water. That amount suits 40 g of curry block.
  7. Bring to a boil, then lower the heat and simmer for about 10 to 12 minutes until the potato and carrot are tender and the liquid has reduced by a quarter.
  8. Add the curry block and cook for another 5 minutes until it thickens.
  9. Season with soy sauce and salt to give it more depth.
  10. Cook over low heat until it is thick like a sauce but not dry, then take it off and let it cool. It thickens further as it cools.
  11. Spoon the curry filling into the middle of a slice of bread.
  12. Cover with another slice and gather the filling towards the centre.
  13. Press down with a round cutter until it cuts through and seals itself, then lift it out.
  14. Dip each bun in beaten egg until the whole surface is covered, then roll it in panko.
  15. Fry over medium to high heat until golden brown, then drain.
