Korean Balloon Bread (Gonggalppang)

  1. Mix the all-purpose flour with the salt, then pour in plain water while stirring with chopsticks.
  2. Add the oil and stir again until incorporated.
  3. Knead the dough by hand on the work surface until smooth; it does not need to pass the window pane test.
  4. Round the dough, oil the bowl, then rest it for 30 minutes so the gluten relaxes.
  5. Mix the palm sugar with the cinnamon for the filling until even.
  6. Weigh out about 70 g portions, or divide into five, and roll each into a smooth ball.
  7. Rest them for another 15 minutes so the dough relaxes again.
  8. Preheat the oven to 220 to 230C.
  9. Flatten each ball, fill it with the palm sugar and cinnamon mixture, then seal it tightly with no air trapped inside.
  10. Dust with a little flour and roll each one out slowly until flat and as thin as possible without tearing.
  11. Arrange on a tray and bake for 10 to 12 minutes until they balloon up and colour nicely.
