Fried Gabin Biscuits with Fermented Cassava Filling

Open offline saves

Ingredients

Steps

  1. Mix 400 g of tape (fermented cassava) that has had its fibres removed and been mashed with 1 tablespoon of granulated sugar, 2 tablespoons of wheat flour, half a teaspoon of salt, and 38 g of white condensed milk, then stir until evenly combined.
  2. Melt 2 tablespoons of margarine in a pan over medium to low heat.
  3. Once the margarine has melted, lower the heat.
  4. Add the tape mixture, then cook over low heat while stirring constantly.
  5. Turn off the heat, then wait a moment until the mixture cools down a little.
  6. Take a malkist biscuit, put the sugared side facing inwards, then brush it with egg white as glue so it does not come apart when fried.
  7. Add enough tape filling, cover with another malkist biscuit that has also been brushed with egg white, then tidy up the edges.
  8. Repeat until all the ingredients are used up; this amount makes nine pieces.
  9. Fry the gabin in hot oil, turning them just once.
  10. Once they are done, lift them out and drain the oil, then fry the rest until they are all done.
