  1. Grind the shallots, garlic, turmeric, and candlenuts (set the galangal, ginger, kaffir lime leaves, bay leaves, and lemongrass aside whole so no one chokes on them).
  2. Heat the oil until very hot, then saute the ground spice paste until fully cooked and no longer raw-tasting.
  3. Season with salt and chicken/mushroom bouillon, add the ground coriander, bay leaves, kaffir lime leaves, and lemongrass, stir well, cook until the spice paste is fully cooked (taste-test: no more bitter, raw flavor).
  4. Pour in the thick coconut milk, stir well, cook until it boils and the oil separates, then turn off the heat and let it cool.
  5. Rub the cooled yellow spice paste all over the chicken (a mix of breast and thigh), marinate in the fridge for at least 6 hours, ideally overnight.
  6. Cook rice as usual to serve alongside.
  7. Heat oil (leftover chicken-frying oil is fine) until it starts to bubble, then fry the marinated chicken until cooked and browned.
  8. Smash/pound the fried chicken together using a mortar and pestle.
  9. Pound the bird's-eye chilies, tomato, shrimp paste, and garlic together for the sambal, add a little salt.
  10. Mix the smashed chicken with the sambal and a drizzle of the leftover chicken-frying oil, combine everything, and serve with warm rice.
