Steps

  1. Grind the shallots, garlic, ginger, turmeric, candlenuts and coriander into an opor spice paste.
  2. Fry the paste with galangal, lemongrass and kaffir lime leaves until cooked and fragrant, then add the chicken.
  3. Pour in the UHT milk in place of coconut milk, stir to combine, then simmer over low heat until the chicken is tender and the seasoning has soaked in, about one and a half hours.
  4. Season with salt and chicken seasoning to taste, then set aside some of the opor broth for the lemper and the pasta.
  5. For the opor lemper, wash the white glutinous rice, then cook it with opor broth, water, lemongrass and bay leaves until done.
  6. Line a 15x15 tin with plastic wrap, then press half of the glutinous rice into it firmly and evenly.
  7. Lay a single layer of shredded opor chicken on top, then cover with the remaining rice and press down again.
  8. Chill the lemper in the fridge until firm, then oil a knife and cut it into pieces.
  9. For the opor fettuccine, bring the opor broth and plain water to the boil in a pot.
  10. Add the fettuccine to the boiling liquid, pressing it down gently until all the pasta is submerged.
  11. Add the sliced red chilli, then cook, stirring, until the liquid reduces and coats the pasta.
  12. Add chopped coriander leaves, stir through, then cook until the sauce reaches the thickness you like.
  13. Serve the pasta with shredded opor chicken, fried shallots and coriander leaves.
  14. Wrap the pieces of lemper in banana leaf or baking paper, then serve.
