  1. Wash 300 g prawns clean, squeeze over lemon or lime juice, mix well, then leave for about 15 minutes. After 15 minutes rinse the prawns clean again.
  2. Boil 1 1/2 liters water with the prawn heads and shells until it boils and the stock smells fragrant, then turn off the heat and strain out the shells so the broth is clear. Set the prawn stock aside.
  3. Boil the large red chilies and red curly chilies first so they lose their raw smell.
  4. Grind the boiled chilies with the garlic and dried shrimp, adding a little water.
  5. Heat a little oil and saute the paste until cooked and fragrant, then turn off the heat.
  6. Stir the fried paste into the prawn stock, add the lemongrass, galangal and torn kaffir lime leaves. Stir until combined and let the broth come to a boil.
  7. Add the salt, chicken stock powder, granulated sugar, ground pepper, fish sauce, sesame oil and 4 tbsp lemon or lime juice. Stir well, then taste and add more citrus juice if it is not sour enough.
  8. Once the broth is boiling and the seasoning is right, add the prawns, meatballs and sausages and let them cook.
  9. Add the rest of the toppings and the vegetables, plus bird's eye chilies if you want it spicier.
  10. Add the enoki mushrooms last, then serve.
