  1. Prepare the banana leaves, warm them briefly over the stove to soften, then cut into oval shapes to size for wrapping.
  2. For the filling (enten), cook a little water, palm sugar, salt, and pandan leaf over low heat until the sugar dissolves.
  3. Add the grated coconut, stir, and cook until the liquid reduces and it's slightly dry (not too dry), then set aside.
  4. For the dough, mix the black and white glutinous rice flours with the salt until combined.
  5. Add the coconut milk and warm water gradually while stirring gently, then add the oil and knead by hand until combined and no longer sticky.
  6. Take a portion of dough using a measuring spoon, shape into a ball, flatten the center, fill with the coconut filling, then seal and reshape into a ball. Repeat until the dough is used up.
  7. Steam the bugis in a mold or on banana leaves lightly greased with oil for about 20 minutes until cooked.
  8. Once cooked and not too hot, remove from the mold, wrap in banana leaves, then fold the top and bottom.
