  1. Wash 1 kg basmati rice thoroughly, then soak for about 1 hour; set aside.
  2. Grind 1 tbsp coriander, 1/2 tbsp pepper, and 1 tbsp cumin together; set aside.
  3. Grind 10 shallots, 10 cloves garlic, and 2 knuckles ginger with a little oil; set aside.
  4. Grind 250 g tomato (about 4 tomatoes).
  5. Saute the ground onion paste with the ground spices, add 2 stalks lemongrass, 10 cardamom pods, 10 whole cloves, and 2 sticks cinnamon, and saute until cooked and fragrant.
  6. Add the ground tomato and cook again until the seasoning is fully cooked, then remove and set aside.
  7. Briefly boil 1 kg beef ribs until the blood and impurities come out, discard the boiling water, then rinse the meat clean.
  8. Put the meat into a pressure cooker, pour in 2 liters water, add the sauteed seasoning, 4 tsp salt, 2 packs beef bouillon powder, 4 tsp granulated sugar, 1 pack instant curry seasoning, and 2 sachets instant coconut milk, stir, then pressure-cook for about 25-30 minutes from when the valve starts hissing.
  9. Once the steam pressure is fully released, open the cooker, remove the meat, then strain the broth and discard the spices; measure the broth to about 1600 ml (top up with plain hot water if needed).
  10. Drain the soaked rice, pour in the kebuli broth, add 4 whole green chilies, then cook the rice as usual in a rice cooker.
  11. Once the rice is done, sprinkle in raisins and mix well, then sprinkle with fried shallots; briefly fry the meat before serving, and serve the nasi kebuli with the meat and the sauteed onion.
