  1. Cut the meatballs into small cubes, shred the boiled chicken breast, and cut the boiled, tender jando (beef fat) into small cubes.
  2. Grind the shallots, garlic, red bird's-eye chilies, and red chilies with a little water.
  3. Saute the spice paste with the bay leaves, lemongrass, galangal, ginger, and kaffir lime leaves (torn first) until cooked and fragrant, without excess oil.
  4. Add salt, beef bouillon powder, granulated sugar, and ground pepper, stir well, and cook over low heat until the seasoning is done.
  5. Divide the seasoning into three portions for the three fillings.
  6. Cook the shredded chicken with one portion of seasoning and a little water until the seasoning is absorbed and the liquid reduces to dry.
  7. Cook the meatballs with the second portion of seasoning and a little water until the liquid reduces; adjust the seasoning to taste.
  8. Cook the jando with the third portion of seasoning and a little water until the liquid reduces, then drain off the excess oil that renders out.
  9. For the cireng dough, mix the tapioca starch, all-purpose flour, salt, chicken bouillon powder, and ground pepper, stir well.
  10. Bring water to a boil, pour it into the flour mixture a little at a time while stirring with a spatula, then knead by hand (carefully, it's hot) until well combined and not too soft.
  11. Roll out the dough with a rolling pin or pasta maker, cut into rounds about 12 cm in diameter, fill with one of the fillings (chicken, meatballs, or jando), seal, and trim off the excess; repeat until all the dough and filling are used.
  12. Fry the cireng over medium heat until cooked, flipping to cook evenly, then remove and drain.
