Flower-Themed Cake Decorating (Chocolate Sponge Cake with Buttercream Roses)

  1. Melt 135 g DCC or chocolate bar over hot water, let it sit for 5 minutes, stir until melted, then add 200 ml oil, mix well, set aside.
  2. Sift 200 g flour and 40 g cocoa powder, mix well, set aside.
  3. Beat 8 eggs, 250 g sugar, SP, and liquid vanilla with a mixer on high speed for 8-10 minutes until pale, thick, and ribbon-like.
  4. Add the flour mixed with cocoa powder little by little on low speed, then add the melted chocolate and oil mixture, mix briefly until combined.
  5. Turn off the mixer, fold with a spatula until fully combined with no pooling.
  6. Pour into a 16 cm pan lined with baking paper, level and tap, then steam for 20 minutes over medium-low heat (done in batches for 4 cake layers).
  7. Once cooked, remove from the pan, let cool.
  8. Beat 350 g unsalted white shortening, 150 g soft cream, and a little salt with a mixer on medium-high speed until soft and smooth.
  9. Add condensed milk, liquid sugar, and liquid vanilla, mix again until the buttercream is completely smooth and soft.
  10. Pipe buttercream roses using a flower tip and flower nail lined with paper, make a few colors (white, peach, purple), refrigerate until firm.
  11. Spread buttercream on the bottom of the cake, add a layer of chocolate ganache in the center, stack the second cake layer, then apply a thin crumb coat of buttercream over the whole surface.
  12. Apply another full layer of buttercream, smooth it with a scraper, patch any gaps.
  13. Attach the firmed buttercream roses on top of the cake, add green and yellow leaves and stamens, add a fondant message, then pack it in the cake box.
