Bandrek and Bajigur — Warm Spiced Drinks for Rainy Days

  1. Roast the ginger over the stove flame, turning it, until fragrant and slightly shriveled, then wipe off the charred bits and bruise it.
  2. For the bandrek, bruise the lemongrass, coarsely pound the black pepper, and bruise half a nutmeg.
  3. Put into a pot: palm sugar, granulated sugar, salt, the bruised ginger and lemongrass, black pepper and nutmeg, cinnamon, cloves, star anise, cardamom, and pandan leaves (tied), then add 2 liters of water.
  4. Cook over medium-low heat, stirring continuously, until the sugar dissolves and it boils, then lower the heat, cover, and cook for about 20 minutes until fragrant.
  5. Turn off the heat, taste, let it sit briefly so the spices infuse further, and strain before serving.
  6. For the bajigur, roast and bruise the ginger.
  7. Put into a pot: palm sugar, granulated sugar, salt, cinnamon, the bruised ginger, pandan leaves (tied), instant coffee, and 2 liters of coconut milk.
  8. Cook over low heat, stirring continuously (so the coconut milk doesn't split), until the sugar dissolves and it boils.
  9. Turn off the heat, stir briefly so the ginger infuses further, then strain.
  10. Clean and cut the kolang kaling into small pieces, then boil briefly as an accompaniment for the bajigur.
  11. Serve the bandrek with pieces of coconut, and the bajigur with kolang kaling.
