  1. Boil the beef ribs briefly to remove blood and impurities, discard the water, and rinse clean.
  2. Pressure-cook the ribs in fresh water for about 20 minutes until tender.
  3. Toast the candlenuts, pepper, coriander, cumin, and nutmeg over low heat until browned and fragrant.
  4. Grind the shallots, garlic, turmeric, ginger, curly red chilies, and the toasted spices with a little oil in a blender.
  5. Sauté the ground spice paste with bay leaves, bruised lemongrass, galangal, torn kaffir lime leaves, cinnamon, and cloves over low heat until cooked through.
  6. Add the beef ribs and beef broth, and stir well.
  7. Once it boils, season with salt, beef bouillon powder, MSG, and sugar, stir well, and cook over medium heat for 15-20 minutes until the seasoning is absorbed.
  8. Add half the instant coconut milk and the milk, stir well, and cook over low heat until it boils.
  9. Serve with garnishes: fried potato, meat, tomato, fried shallots, scallions, melinjo crackers, lime, and sweet soy sauce.
