Soto Banjar (South Kalimantan Soup)

Steps

  1. Bring water to boil, add chicken, salt, chicken bouillon powder and sugar, cook over low heat for 40 minutes
  2. Boil Indonesian bay leaves until tender then in blender add garlic, shallots, candlenuts, ginger, white pepper, nutmeg, star anise, aromatic ginger, bay leaves, oil and water, blend until smooth
  3. Heat wok, add star anise, green cardamom, cloves and cinnamon, toast until fragrant then add spice paste, cook until fragrant and oil separates
  4. Add chopped green onion and margarine, sauté until fragrant then add spice paste to broth
  5. Add celery and powdered milk, cook until chicken is cooked through
  6. Cut potato into pieces then place in heated oil, fry until half-cooked
  7. Cut garlic and shallots then fry together with potato, fry until cooked and golden, drain and transfer to mortar
  8. Add salt, chicken bouillon powder, sugar and black pepper, crush until smooth then finely chop green onion and celery
  9. Transfer potato to bowl then add green onion, celery, cornstarch and egg, stir well
  10. Shape potato with ice cream scoop then flatten slightly and coat with beaten egg, fry until cooked, drain
  11. Set aside chicken, let cool and shred
  12. In mortar, add cooked duck egg yolk and fried garlic, crush until smooth
  13. Transfer to bowl and add a little soto broth, stir well. Return to soto broth, cook briefly
  14. Soto banjar is ready to serve
