Mochi-Filled Bread

Ingredients

For bread dough:

For tangzhong (sponge):

Steps

  1. For tangzhong, prepare wok, add all-purpose flour and water, stir well and cook over low heat until thickened. Set aside and place in refrigerator for at least 6 hours or overnight
  2. Prepare mixer bowl with dough hook, add all-purpose flour, powdered milk, sugar and yeast, stir briefly then add ice water, milk, eggs and tangzhong, mix at medium speed for 4-5 minutes
  3. Add salt and butter blend margarine. Mix again at high speed for 10 minutes or until dough is almost formed. Divide dough into 3 parts then mix one part again until fully formed
  4. Add pandan flavoring and chocolate coloring to another dough part, mix again until dough is formed. Set aside then repeat for chocolate dough part
  5. Round dough, cover with plastic and let rest for 30-40 minutes at room temperature for first fermentation then shape each into 50 g portions, cover with plastic and let rest for 30 minutes or 2 hours in refrigerator
  6. For mochi, in bowl mix glutinous rice flour and sugar then pour hot water, stir until combined
  7. Pour into wok while straining, add oil and cook mochi dough over medium heat while stirring constantly until cooked. Pour mochi to pan lined with plastic wrap and flatten. Cool until set, weigh 30 g each
  8. For milk filling, in mixer add butter blend margarine, mix until slightly puffed then add powdered sugar and powdered milk, mix again until combined. Store in refrigerator until set, weigh 20 g each, round and place in refrigerator
  9. Flatten bread dough, press edges with hand. Fill with parmesan cheese, mochi and milk filling, round while sealing
  10. For pandan dough, fill with mochi and 25 g pandan filling, round and seal. For chocolate dough, fill with mochi and 20 g chocolate filling, round and seal
  11. Let filled and shaped dough rest for 1-1.5 hours at room temperature or place in proofer at 30°C with 80% humidity for 50 minutes
  12. Sprinkle a little flour on puffed dough then make a slight cut on surface
  13. Bake at 150°C or if using deck oven with top 160°C and bottom 180°C for 10-12 minutes. Rotate pan halfway through baking
  14. Mochi-filled bread is ready to serve
