Marble Bread Pudding with Chocolate Sauce

Steps

  1. Tear 4 slices of crustless white bread into pieces and put them in the blender.
  2. Pour in 500 ml milk.
  3. Add 2 whole eggs and 2 tbsp condensed creamer.
  4. Blend until smooth, then set aside.
  5. In a large saucepan, combine 1 packet of plain agar powder, 180 g sugar, 500 ml room temperature water and 1 tsp vanilla extract.
  6. Stir briefly until the agar powder has dissolved.
  7. Turn the heat to medium and stir constantly until it boils.
  8. Once boiling, turn off the heat, then strain in the blended bread mixture while stirring.
  9. Stir until evenly combined.
  10. Turn the heat back on to medium low.
  11. Keep stirring until the mixture boils and bubbles, then turn off the heat.
  12. In one bowl, mix 15 g cocoa powder, 1/2 tsp rum essence and 4 tbsp hot water until smooth.
  13. In another bowl, mix 3 g cocoa powder, 1/2 tsp rum essence and 2 tbsp hot water until smooth.
  14. Add some of the plain mixture to each cocoa bowl, as much as you like, then stir until evenly coloured.
  15. Set out a pudding mould, then pour the mixtures in alternately: plain, dark chocolate, plain, then light chocolate.
  16. Leave it at room temperature for a while, then chill the pudding until set.
  17. For the chocolate sauce, put 50 g sugar, 6 g cocoa powder and 5 g cornstarch in a saucepan.
  18. Add 2 egg yolks and 1 tsp rum essence, which you can swap for vanilla extract.
  19. Pour in 250 ml milk and stir until fully combined.
  20. Turn the heat to low and stir constantly until the sauce thickens and bubbles, then turn off the heat.
  21. Move the sauce to a bowl and chill it; it thickens further as it cools.
  22. Once the pudding has set, turn it out of the mould and slice it.
  23. Pour over the chocolate sauce and serve.
