Klepon Nastar, Coconut Rolled Pineapple Tarts

Steps

  1. Scoop the pineapple jam with a 1/2 tsp measure and roll it into balls one by one so they weigh the same.
  2. Combine 100 g butter, 100 g margarine and 40 g sugar in a bowl.
  3. Whisk by hand until smooth; if you prefer a mixer, use low speed.
  4. Add 1 egg yolk and half of the egg white, then mix until evenly combined.
  5. Add 15 g milk powder and 20 g cornstarch, then mix again until smooth.
  6. Add the plain flour, holding back about a quarter of it, and stir with a spatula.
  7. Carry on mixing with your hands, it is easier that way.
  8. Add the rest of the flour, keeping about 2 tbsp in reserve, and mix until the dough no longer sticks to your hands.
  9. Add pandan paste and light green food colouring, then mix until the colour is even.
  10. Portion the dough with a 1 tsp measuring spoon so all the tarts come out the same size.
  11. Take one portion, roll it into a ball, then press the centre with your thumb or finger to make a little cup.
  12. Put in one ball of pineapple jam, then seal it closed.
  13. Roll it round again until the surface is smooth.
  14. Roll it in 80 g desiccated coconut; leave the base uncoated so it does not scorch.
  15. Arrange on a tray lined with baking paper, then repeat until all the dough is used.
  16. Preheat the oven for 10 minutes at 150 degrees Celsius with top and bottom heat.
  17. Bake for 30 minutes.
  18. After 30 minutes, swap the upper and lower trays so they bake evenly.
  19. Bake for another 10 minutes or until done.
  20. Check the underside of the tarts; once they are golden brown they are ready to come out.
