Condensed Milk Cotton Cake

  1. Get a round tin 15 cm across and 7 cm tall ready.
  2. Sift 60 g low protein flour and set it aside.
  3. Separate 4 eggs; use 4 yolks and only 3 whites.
  4. Add 1/2 tsp vanilla extract to the yolks, then set them aside.
  5. Melt 40 g butter in a saucepan over low heat.
  6. Once the butter has fully melted and starts to foam, turn off the heat.
  7. Add the sifted flour while whisking until evenly combined.
  8. Pour in 60 g condensed milk and whisk again until combined.
  9. Pour this mixture into the bowl of egg yolks and stir until evenly combined.
  10. Whip the 3 egg whites on medium speed.
  11. Once plenty of foam has formed, add 45 g sugar gradually in three additions.
  12. Whip to soft peaks, or stiff peaks if you prefer.
  13. The meringue is ready when you can turn the bowl over without it falling out.
  14. Fold a third of the meringue into the yolk batter with a whisk until combined.
  15. Scrape right down to the base of the bowl to be sure it is evenly mixed.
  16. Pour the yolk batter into the remaining meringue.
  17. Fold with the whisk, starting at the top and then working down to the bottom.
  18. Scrape again to make sure nothing has settled at the bottom.
  19. Pour the batter into the tin.
  20. Tap the tin a few times to knock out air bubbles.
  21. Set the tin inside a larger tray, then pour in hot water to a depth of 1 to 1.5 cm for a water bath.
  22. Bake at 160 degrees with top and bottom heat for 45 minutes or until done.
  23. Once baked, turn the cake straight out of the tin.
  24. Dust the top with icing sugar before serving.
