Ingredients

Topping:

Steps

  1. Put 180 g granulated sugar, 1/4 tsp salt, and 100 ml settled pandan extract into a pot and stir until combined.
  2. Cook over medium heat until the sugar dissolves and the liquid boils.
  3. Turn off the heat then let the sugar syrup cool.
  4. Mash 125 g fermented cassava tape with a fork or a blender.
  5. Put 250 g wheat flour into a bowl.
  6. Add the mashed tape and 1 tsp instant yeast.
  7. Pour in 250 ml medium thick coconut milk then stir until evenly combined.
  8. Add the sugar syrup a little at a time while stirring until the batter is smooth.
  9. If the colour is too pale, add 1/2 tsp pandan paste then stir again.
  10. Strain the batter to make sure there are no lumps.
  11. Cover the batter with a dry cloth then let it rest for about one hour.
  12. Grease a 21x21 cm pan with cooking oil then line it with banana leaf or plastic.
  13. Mix 150 g grated coconut with 1/2 tsp salt and 1 pandan leaf.
  14. Steam the grated coconut for about 10 minutes then let it cool.
  15. After one hour, stir the batter briefly then pour it into the pan and level it.
  16. Tap the pan a few times so trapped air can escape.
  17. Steam for about 45 minutes over medium heat, lining the steamer lid with a clean cloth.
  18. After 45 minutes touch the surface, and if it is no longer sticky the cake is done.
  19. Run a knife around the edge then turn the cake out of the pan.
  20. Cut the cake with a plastic covered knife then serve it with the steamed grated coconut.
