Easy Cheese and Sausage Breakfast Bread

  1. Prepare a bowl and add 1 tbsp of granulated sugar and 1 tsp of instant yeast, making sure the yeast is still active.
  2. Add 150 ml of warm water.
  3. Add 1 egg and 2 tbsp of cooking oil, then stir until evenly combined.
  4. Add 300 gr of high-protein wheat flour that has been mixed with 1/2 tsp of salt.
  5. Stir the dough with a spatula until evenly combined.
  6. Continue kneading by hand until smooth; it does not need to reach the elastic windowpane stage since this is not doughnut dough.
  7. Roll the dough into a ball then put it back into the bowl.
  8. Cover the dough with plastic wrap or a clean cloth then rest it for 30 minutes until it doubles in size.
  9. For the filling, prepare 100 gr of mozzarella cut into small pieces, 100 gr of grated cheddar, and 2 sausages thinly sliced, keeping some aside for the topping.
  10. Mix the filling until evenly combined, divide it into two equal parts, then squeeze each into a ball and set aside.
  11. After 30 minutes, when the dough has doubled, knock it back then roll it into a ball again.
  12. Divide the dough into two equal portions.
  13. Oil your hands lightly then flatten the dough.
  14. Place a ball of the cheese filling in the centre of the dough, then roll it up again until it is fully sealed.
  15. Flatten the dough again.
  16. Place the dough on a tray brushed with margarine then flatten it a little more so it looks neat.
  17. Brush the surface of the dough thinly with 1 egg yolk.
  18. Top with the grated cheese, mozzarella, and sausage that were set aside earlier.
  19. Preheat the oven for about 10 minutes, then put in the tray on the lowest rack.
  20. Bake at 175 degrees Celsius with bottom heat for about 20 minutes until done, adjusting to your own oven.
  21. After 20 minutes, when it is golden brown, take it out of the oven.
  22. Do the same with the remaining dough; you may also use a 26 x 26 cm square tin.
  23. Serve while still warm so it tastes even better.
