Ingredients

Palm Sugar Sauce:

Steps

  1. Prepare a pot, add 1 litre of water, then bring it to the boil over medium heat.
  2. Once the water boils, add 100 g pearl sago and cook for about 10 minutes, stirring occasionally.
  3. Turn off the heat, cover the pot, then leave it for about 30 minutes so the pearls soften faster.
  4. Uncover the pot, turn the heat back on, add 3 tbsp granulated sugar, then cook again for about 10 minutes until it boils.
  5. Turn off the heat, cover the pot, then leave it again for about 10 minutes until the pearls are completely translucent, then set aside.
  6. Prepare a bowl, add 250 g glutinous rice flour and half a teaspoon of salt, then stir until evenly combined.
  7. Add about 200 ml warm water a little at a time, then knead the dough until smooth and shapeable.
  8. Take a little dough and roll it into a ball, then shape all the dough into balls of whatever size you like.
  9. Prepare a pot and add 200 g palm sugar, 2 pandan leaves and 1 litre of water.
  10. Prepare a bowl and add 1 tbsp rice flour, 1 tbsp glutinous rice flour and 50 ml water, then stir until smooth and set aside.
  11. Turn on medium heat and cook the palm sugar mixture until it boils and the sugar dissolves, then turn off the heat.
  12. Strain the palm sugar liquid to remove the sediment, then bring it back to the boil.
  13. Once it boils, add the rice balls and cook, stirring occasionally, until they float and are cooked through.
  14. Stir the flour slurry first, then pour it into the pot and cook, stirring constantly, until it boils again and thickens.
  15. Once the candil porridge has thickened and bubbles, turn off the heat and set it aside.
  16. Prepare a bowl and add 100 g rice flour, half a teaspoon of salt and part of the 1 litre of coconut milk, then stir until smooth and lump-free.
  17. Add the remaining coconut milk and 1 tsp pandan paste, then stir until evenly combined.
  18. Pour the mixture into a pan, add 2 pandan leaves, then cook over medium heat, stirring constantly, until it boils and thickens.
  19. Once the sumsum porridge is done, turn off the heat and set it aside.
  20. Prepare a pot and add 2 tbsp rice flour, 1 tbsp granulated sugar, 1 tsp salt and part of the 700 ml thick coconut milk, then stir until no flour lumps remain.
  21. Add the rest of the coconut milk, then stir again until evenly combined.
  22. Add 2 pandan leaves, then cook over medium heat, stirring constantly, until the coconut milk boils and bubbles, then turn off the heat.
  23. Serve the candil, pearl sago and sumsum porridges together in one bowl, then pour the coconut sauce over the top.
