Ingredients

Coconut Pudding Ingredients:

Clear Pudding Ingredients:

Orange Pudding Ingredients:

Custard Sauce Ingredients:

Steps

  1. Put the coconut flavoured jelly powder, a pinch of salt, and the sugar into a pot, then stir them together first so the powder does not clump when the liquid goes in.
  2. Pour in the coconut milk, then stir until evenly combined.
  3. Cook over medium heat while stirring constantly so the coconut milk does not split, until it boils, then turn off the heat.
  4. Pour the mixture into a container, then leave it until set and firm; you can speed this up by chilling it once cool.
  5. Scrape or shred the coconut jelly, then set it aside.
  6. Put the plain jelly powder and sugar into a pot, then stir until evenly combined.
  7. Pour in the water, then stir until evenly combined.
  8. Cook over medium heat, stirring occasionally, until it boils, then turn off the heat.
  9. Scatter the basil seeds into a 24 cm mould.
  10. Add the coconut jelly and the clear pudding mixture to the mould alternately so the coconut jelly does not all float to the top.
  11. Press the coconut jelly down so it stays submerged and covered by the clear pudding, then leave it until set.
  12. Put the plain jelly powder, orange flavoured jelly powder, and sugar into a pot, then stir until evenly combined.
  13. Pour in part of the orange juice and stir until combined, then add the rest and stir again until evenly combined.
  14. Cook over medium heat while stirring constantly until it boils, then turn off the heat.
  15. Prick the surface of the clear pudding so the layers stick together when the pudding is turned out later.
  16. Pour the orange pudding into the mould slowly and spread out so the layers below do not sink.
  17. Leave it until the pudding sets and firms up, then chill it in the fridge for at least about four hours.
  18. Turn the pudding out of the mould, then cut it as you like; it may also be served with custard sauce.
