Ingredients

Sponge Ingredients:

Steps

  1. Prepare a pan, add 2 tbsp margarine, then turn the heat to medium.
  2. Add 4 cloves of grated garlic and 1 onion that has been cut into small pieces, saute until fragrant.
  3. Add 200 g chicken that has been cut into small pieces, cook until the chicken changes colour.
  4. Add 2 carrots cut into small cubes, 200 g potatoes that have been chopped, and 1/2 corn cob of kernels.
  5. Add 1/2 tsp ground pepper, 1/4 tsp ground nutmeg, 1/2 tsp granulated sugar, 1/2 tsp salt, and 1/2 tsp powdered broth.
  6. Stir until evenly combined, then cook until the carrots are tender.
  7. Add 3 tbsp wheat flour and stir until evenly combined.
  8. Add 350 ml liquid milk and cook until it boils and thickens, stirring constantly so the bottom does not scorch or clump.
  9. Add 2 stalks of finely sliced celery, stir briefly until evenly combined.
  10. Adjust the seasoning, turn off the stove, then set the chicken ragout aside.
  11. Prepare a bowl, add 6 eggs, 125 g granulated sugar, and 1 1/2 tsp emulsifier.
  12. Add 180 g wheat flour, 20 g milk powder, and 20 g cornstarch, sifting them in.
  13. Beat at low speed first so the flour does not fly about, then raise it to maximum speed until the batter is pale, risen, thick, and holds a trail.
  14. After about 10 minutes of beating, when the mixer trail no longer sinks easily, turn off the mixer.
  15. Add 180 g melted margarine.
  16. Fold slowly from the bottom up until evenly combined and there is no pool of margarine left.
  17. Pour the batter into paper cups.
  18. Place some chicken ragout on top.
  19. Cover with more batter, do not fill it too full so it does not overflow while baking.
  20. Sprinkle with finely sliced celery, using only the leaves.
  21. Bake at 160 degrees Celsius using top and bottom heat for about 30 minutes until the sponge is done.
  22. After about 30 minutes of baking, when the surface is dry and browned, take the tray out of the oven.
