Pandan and Chocolate Bread Pudding

Open offline saves

Ingredients

Steps

  1. Put 10 slices of white bread with the crusts trimmed off into the chopper.
  2. Add 3 packets of plain agar-agar powder, 2 eggs, 150 gr granulated sugar, 250 gr sweetened condensed milk, and 1/2 tsp vanilla.
  3. Add 1 liter of water and part of the 1 liter of liquid milk so the chopper does not overflow.
  4. Blend until the mixture is smooth and evenly combined.
  5. Pour the blended mixture into a pot, then add the remaining liquid milk.
  6. Cook over medium heat until it boils and thickens, stirring constantly so the bottom does not scorch or turn lumpy.
  7. Once it boils and thickens, turn off the heat.
  8. Add 3 tbsp margarine, then stir until the margarine melts and is evenly combined.
  9. Measure out 40 gr cocoa powder, dissolve it in 80 ml hot water, then stir until evenly combined.
  10. Divide the mixture into two equal parts.
  11. Mix a little of the pudding mixture into the dissolved cocoa and stir until evenly combined, then pour it back into one of the two parts and stir until evenly combined.
  12. Add 1 tsp pandan paste to the other part, then stir until evenly combined.
  13. Prepare a mould that has been moistened with water so the pudding releases more easily later.
  14. Pour the two mixtures into the mould alternately, layer by layer.
  15. Let the pudding set. Do not move or shake it so it keeps its shape, then chill it in the fridge for about 4 hours.
  16. Once the pudding is set and cold, turn it out of the mould, slice it, and serve.
