Ingredients

Liquid Ingredients:

Steps

  1. Cut up fruit to taste, here I use kiwi, mango, watermelon, dragon fruit, and strawberry.
  2. Prepare a pot, add 1 packet of lychee flavoured jelly powder and 100 g granulated sugar, stir until evenly combined so it does not clump when the liquid goes in.
  3. Add 700 ml water, then stir until evenly combined.
  4. Cook over medium heat until boiling while stirring constantly so the bottom does not scorch or clump.
  5. Once boiling turn off the stove, then let it stand briefly until the steam has died down and it is just warm.
  6. Arrange the fruit inside the jelly ball moulds.
  7. Once the jelly mixture is warm, pour it into the moulds slowly and spread out until the moulds are full.
  8. Close the moulds, press gently and firmly so the jelly sets into a ball shape.
  9. Let the jelly firm up, then chill it in the fridge for about 1 hour so it is firm and springy.
  10. Prepare a pot, add 100 g fibercream and 50 g granulated sugar, stir until evenly combined.
  11. Add part of the 1 litre of water, stir until evenly combined, then pour in the rest of the water.
  12. Cook over medium heat until boiling while stirring constantly so the bottom does not scorch or clump.
  13. Once boiling turn off the stove, then leave it to cool.
  14. After about 1 hour of chilling, open the jelly moulds.
  15. Once the creamy liquid is cold, add 100 g sweetened condensed milk and 1 can of evaporated milk, then stir until evenly combined.
  16. Soak 1 tbsp basil seeds in a little water until they swell up.
  17. Put the jelly balls into the creamy liquid.
  18. Add the soaked basil seeds, then stir until evenly combined.
  19. Chill in the fridge for 2 hours before serving.
