Pastry Ingredients:

Steps

  1. Put 800 ml of liquid milk, 200 g of granulated sugar, 120 g of cornstarch, half a teaspoon of salt, 1 teaspoon of vanilla, and two egg yolks into a pot, then stir until evenly combined.
  2. Cook over medium heat, stirring constantly, until it boils, thickens, and bubbles up, then turn off the heat.
  3. Add 30 g of margarine, then keep stirring until the margarine melts and is mixed through.
  4. Move the custard to another container, cover it with plastic so it does not form a skin, then leave it until cool.
  5. Put 200 ml of water, 125 g of margarine, 1 tablespoon of granulated sugar, and half a teaspoon of salt into a pot.
  6. Cook over medium heat until it boils and the margarine has melted, then turn the heat down low.
  7. Add 150 g of wheat flour, then keep cooking while stirring constantly until the dough comes together into a smooth mass.
  8. Turn off the heat, move the dough to another bowl, spread it out wide, then leave it about 15 minutes until cool.
  9. Once the dough is cool, add the 3 eggs one at a time, mixing until evenly combined after each on medium speed.
  10. Transfer the dough to a piping bag fitted with a nozzle.
  11. Draw a circle in pencil on baking paper using a 20 cm tin as a guide, then lay the paper on the tray with the pencil side facing down.
  12. Pipe all of the dough along the pattern on the tray until the dough is used up.
  13. Scatter sliced almonds over the top.
  14. Bake in an oven preheated for about 10 minutes at 190 degrees Celsius with top and bottom heat for about 40 minutes until the surface is browned and firm.
  15. Take the ring off the tray, slice it in half horizontally through the middle while it is still hot, then leave it to cool.
  16. Beat 160 g of margarine on maximum speed for about 10 minutes until it is light and pale.
  17. Combine the cooled custard with the beaten margarine, then mix on maximum speed until evenly combined.
  18. Transfer the cream to a piping bag, then pipe it onto the cooled ring.
  19. Cover the cream with the top half of the ring, then chill it in the fridge for about 3 hours.
  20. Dust the top with icing sugar, then serve.
