Bandung Yamien Noodles Recipe

Steps

  1. To make the aromatic oil, heat a pan, add the chicken skin and water, then cook until the water evaporates
  2. Add the oil, pounded garlic, and pounded shallots
  3. Cook over low heat until dry, then strain and set aside
  4. For the ground chicken stir-fry, heat the oil, add the garlic, and sauté until fragrant
  5. Add the ground chicken and season with soy sauce, oyster sauce, sugar, pepper, and flavor enhancer, then add the water and cook until the liquid evaporates
  6. For the fried wontons, combine the ground chicken with all the ingredients, then mix until thickened
  7. Prepare the wonton wrappers, place 1 tsp filling on each, fold up the bottom, and seal the sides with a light brushing of water
  8. Fry the wontons until golden brown
  9. Prepare boiling water and cook the noodles until done
  10. For sweet yamien, add 2-3 tbsp chicken-onion oil, 1 tbsp sweet soy sauce, 1 tsp soy sauce, ½ tsp fish sauce, ¼ tsp pepper, and ¼ tsp flavor enhancer to a bowl. Add the freshly cooked noodles and mix well
  11. For savory yamien, add 2-3 tbsp chicken-onion oil, 2 tsp soy sauce, 1 tsp fish sauce, ¼ tsp pepper, and ¼ tsp flavor enhancer to a bowl. Add the freshly cooked noodles and mix well
  12. Serve the yamien with the ground chicken stir-fry, tongcai, sliced green onions, fried shallots, fried wontons, and sambal on the side
