  1. Render chicken skin until it melts, turns golden brown, and becomes fragrant to make chicken oil.
  2. Grind the bird's-eye chilies and red chilies (to taste for spiciness), ginger, the white part of the scallions, shallots, and garlic.
  3. Sauté the ground spice paste in a little chicken oil with bruised lemongrass and bay leaves.
  4. Season with sugar, chicken bouillon powder, and salt, and cook until the paste is dry and no longer raw-smelling.
  5. Add the ground chicken, stir well, then add oyster sauce and salty soy sauce.
  6. Add the sliced mushrooms and scallions, and cook until well combined.
  7. Add sweet soy sauce to taste for a caramel note, and check the seasoning until it's balanced.
  8. For each serving, mix sweet soy sauce, salty soy sauce, and chicken oil in a serving bowl, and stir well.
  9. Boil the noodles, stirring, for about 1 minute in vigorously boiling water, then drain and add to the seasoned bowl and toss while hot.
  10. Top with the spicy chicken, fried wontons, fried shallots, and scallions.
