  1. Heat the milk until lukewarm (about 38C), mix in the instant yeast and a little sugar, stir, let sit for about 30 minutes until foamy and active.
  2. Make the tangzhong: mix the flour and milk while still cold, stir well, then turn on low heat and cook while stirring constantly until it thickens like paste, add the remaining sugar and salt, stir well, remove from heat.
  3. Saute the minced garlic until half-cooked and fragrant, mix it into the melted butter.
  4. Combine the bread flour and milk powder in a mixer bowl, add the egg to the yeast-milk mixture, pour it into the flour a little at a time while mixing, then add the tangzhong.
  5. Knead until the dough no longer sticks to your hands, add the garlic butter mixture, knead again until smooth, elastic, and not sticking to the bowl at all.
  6. Round the dough, let it rest in a covered bowl in a warm, humid place until doubled in size.
  7. Weigh and divide the dough into 5 equal portions (about 120 g each), round each one.
  8. Let the rounded dough rest a second time until it puffs up again.
  9. Roll each piece of dough long enough to fit a sausage, place the sausage on top, roll and shape it like a durian by pulling the sides, pinch the ends tightly.
  10. Snip the top of the dough at about 1-2 cm intervals (without cutting through the sausage), braid the strips alternately left and right, then brush the surface with an egg wash.
  11. Bake in a preheated oven at 190C for about 10 minutes, then add 2 more minutes with top heat for browning, then garnish with mayonnaise, ketchup, sliced onion, and grated cheese before serving.
