  12. Heat a pan, render the fat side of the steak first, then cook the steak about 3 minutes per side for medium, basting with butter, thyme, and garlic.
  13. Rest the steak briefly, then slice and serve with the roasted potatoes, roasted Brussels sprouts, and the peppery sauce.
