  1. Chop the garlic and shallots for the base seasoning.
  2. Prepare the vegetables (mustard greens, scallion, bean sprouts) and the beef, pounding it to break it down and tenderize it, then slice thin.
  3. Add a little cornstarch, salt, and a little oil to the beef, mix to tenderize it, then set aside.
  4. Prepare wet kwetiau noodles (not dried) for a more fragrant, chewy result.
  5. Make the sauce: mix oyster sauce, light soy sauce, sesame oil, chicken powder, a little white pepper, and MSG, and stir well.
  6. Make the sambal: chop garlic and bird's-eye chilies, add MSG, sugar, a little salt, and water, then cook until boiling.
  7. Heat a large wok with oil until hot.
  8. Add the chopped base seasoning and the beef, and sauté until browned.
  9. Add the eggs, and scramble until frothy.
  10. Add the scallion, stir, then add the kwetiau and toss so it doesn't stick.
  11. Pour in a little water to help soften the kwetiau.
  12. Add the sauce (most of it, holding some back) and sweet soy sauce, then add the vegetables (bean sprouts, mustard greens).
  13. Add a second egg for richness, taste and add chicken powder if not salty enough, plus the rest of the scallion, then serve topped with fried shallots and the sambal.
