  1. Cut the chicken into 4 large pieces (remove the backbone, use the thighs and breast).
  2. Blend the garlic, shallots, and ginger with a little water.
  3. Heat coconut oil in a large pot, sauté the spice paste until fragrant (don't let it brown, so the chicken stays pale).
  4. Add the torn bay leaves, smashed lemongrass, and galangal.
  5. Add the chicken, stir over high heat so it's coated in the seasoning.
  6. Add the coconut water.
  7. Season with sugar, salt, and mushroom bouillon powder.
  8. Simmer over low heat for about 1 hour with the lid slightly ajar until the chicken is tender.
  9. Meanwhile, make the sambal: blend the large red chilies, curly chilies, tomato, garlic, and shallots with a little water, then sauté in coconut oil, season with salt and mushroom bouillon powder, and cook until the liquid reduces and the color brightens.
  10. Once the chicken is tender, remove it from the broth and drain.
  11. Heat oil with a little added margarine, dip the chicken briefly until its color changes slightly, then remove and serve with the sambal and pork/beef skin crackers (dorokdok).
