Sardine Curry and Crispy Mushroom (Easy Suhoor & Iftar Menu)

  1. Slice the onion, shallots, garlic, ginger, large red chili, and tomato.
  2. Sauté the shallots, garlic, and onion until fragrant and soft, then add the ginger and lemongrass, stirring briefly.
  3. Add the large red chili, then add the canned sardines.
  4. Add water and stir gently (so the sardines don't fall apart), season with salt, chicken bouillon powder, and sugar, and cook until the sauce reduces slightly.
  5. Add the bird's-eye chilies and tomato, cook briefly, then turn off the heat and garnish with scallion and red chili.
  6. For the crispy mushroom, mix the all-purpose flour, rice flour, cornstarch, salt, chicken bouillon powder, and pepper together as the dry batter.
  7. Take some of the dry batter and mix it with water to make the wet batter, stir until combined.
  8. Wash the mushrooms clean (split into 2-3 pieces if large), then squeeze to reduce their water content.
  9. Toss the mushrooms in the dry batter (without pressing), then sift off the excess flour.
  10. Dip the mushrooms into the wet batter, then coat again in the dry batter until fully covered; shake off the excess before frying.
  11. Deep-fry in hot oil, then lower to medium heat once they firm up, and cook until golden brown.
  12. Remove and drain the crispy mushrooms, and serve alongside the sardine curry as a suhoor/iftar menu.
