Halal Siantar Curly Noodles Recipe

  1. Marinate the chicken thigh fillet with char siu sauce and red food coloring. Mix well. Leave for 2 hours at room temperature or overnight in the refrigerator.
  2. Slice the curly red chilies and green bird's-eye chilies, then set aside in a bowl.
  3. Add the water, vinegar, sugar, and salt to a pan and bring to a boil. Pour over the sliced chilies and mix well.
  4. Dice the chicken, then marinate it with soy sauce, mushroom bouillon, and pepper. Mix well and leave briefly.
  5. Slice the garlic and shallots, then add them to a blender with the ginger and water. Blend until smooth.
  6. Add the chicken skin, water, salt, and pepper to a pan. Cook until reduced, then add the oil and cut up the chicken skin with scissors. Cook over medium-low heat until dry, then drain.
  7. Add the blended spices to the pan and sauté until fragrant. Add the chicken and sauté briefly.
  8. Add the water, sweet soy sauce, oyster sauce, and five-spice powder. Mix well, then add the boiled eggs and cook for 15 minutes.
  9. Add the sugar, cook briefly, and transfer to a bowl.
  10. Arrange the char siu chicken in an air fryer. Cook at 170°C for 10-12 minutes. If it is not cooked enough, cook again at 180°C for 5 minutes.
  11. Boil the curly noodles for 2-3 minutes and briefly blanch the bean sprouts, then drain.
  12. Halal Siantar curly noodles are ready to serve.
