  1. Cut the chicken (1/2 bird) into 6 pieces.
  2. Mix Desaku turmeric powder (1/2 tsp), Desaku ground coriander (2 tsp), salt (1 tsp), and water (5 tbsp), stir until dissolved, then pour over the chicken.
  3. Add cooking oil (4 tbsp) to the seasoned chicken.
  4. Slice the garlic (2 cloves) and shallots (4), and split and bruise the lemongrass (2 stalks).
  5. Saute the garlic until slightly golden.
  6. Add the shallots and lemongrass, and saute until fragrant.
  7. Add the sliced bird's-eye chilies, and stir briefly.
  8. Add the chicken (without the marinade liquid), and cook until it releases juices and turns a yellowish color.
  9. Add 1 glass of medium-thick coconut milk along with the leftover marinade from the chicken.
  10. Add the remaining coconut milk (up to 750 ml total), then add salt (1/2 tsp) and sugar (1 tsp).
  11. Add the whole bird's-eye chilies and the diagonally-cut curly chilies, stirring so the coconut milk doesn't split.
  12. Add the Ladaku Ground Pepper (1/2 tsp).
  13. Turn off the heat, add the lime juice, and serve.
