Ciam Bie Ie, Hakka Short Rice Noodles

  1. Set a non stick pan on the counter, not on the stove, and mix 200 g rice flour, 15 g tapioca starch and 1/2 tsp salt, stirring briefly.
  2. Pour in 450 ml room temperature water a little at a time, whisking until evenly combined.
  3. Put the pan on the stove over medium low heat, then cook while stirring constantly, never leaving it unattended.
  4. Keep stirring until the batter starts gathering on the spatula.
  5. Turn the heat down to the very lowest flame, then stir quickly right down to the base of the pan so the bottom does not scorch.
  6. Stir until the dough forms one mass and nothing is stuck to the pan.
  7. Scatter 30 g tapioca starch over your work surface, then turn the hot dough out onto it.
  8. Knead until smooth and all the tapioca starch is absorbed; wear thick gloves if you cannot handle the heat.
  9. Have extra tapioca starch ready to dust your palms so the dough does not stick.
  10. Roll the dough into a log, then divide it into six pieces.
  11. Take one piece and keep the rest covered so they do not dry out.
  12. Roll it into a log, then cut it in half so it is not too long.
  13. Roll each half again into a long thin rope, then cut each one in half.
  14. Cut the ropes into small pieces until they are all done; dust with tapioca starch if they start sticking.
  15. Take one small piece and roll it out lengthwise using the base of your thumb.
  16. Put each shaped piece on a plate and carry on until all the dough is used.
  17. Bring a pot of water to the boil, and get a basin of plenty of cooled boiled water ready for soaking.
  18. Divide the ciam bie ie into three batches and sieve off any excess starch first.
  19. Drop them into the boiling water straight after sieving, because they stick together if left standing.
  20. Cook until they float, which means they are done.
  21. Lift them out and drain, then plunge them straight into the basin of water and stir briefly.
  22. Drain them well, then move them to a clean bowl.
  23. Add 1 tsp vegetable oil and toss until coated so they do not stick to each other.
  24. If a lot of starch is still clinging, soak them a second time by moving them into a second basin of water.
  25. After the final soak, add another 1 tsp vegetable oil and toss until evenly coated.
  26. Pack into two portions of about 400 g each, one portion per cooking.
