Cara Membuat
- Siapkan wajan anti lengket di luar kompor, lalu campur 200 gr tepung beras, 15 gr tepung tapioka, dan 1/2 sdt garam, aduk sebentar.
- Tuang 450 ml air suhu ruang sedikit demi sedikit sambil diaduk dengan whisk sampai tercampur rata.
- Letakkan wajan di atas kompor, nyalakan api sedang cenderung kecil, lalu masak sambil terus diaduk tanpa ditinggal.
- Aduk terus sampai adonan mulai menggumpal di spatula.
- Kecilkan api sampai sekecil-kecilnya, lalu aduk cepat sampai ke dasar wajan supaya adonan bawah tidak hangus.
- Aduk sampai adonan menggumpal dan tidak ada lagi yang menempel di wajan.
- Sebarkan 30 gr tepung tapioka di alas kerja, lalu letakkan adonan panas di atasnya.
- Uleni sampai kalis dan tepung tapiokanya habis terserap; pakai sarung tangan tebal kalau tidak tahan panas.
- Siapkan tepung tapioka secukupnya untuk dibalurkan ke telapak tangan supaya adonan tidak lengket.
- Bentuk adonan memanjang, lalu bagi menjadi enam bagian.
- Ambil satu bagian dan tutup sisanya supaya tidak kering.
- Bentuk memanjang lalu potong menjadi dua supaya tidak terlalu panjang.
- Gulung lagi sampai panjang dan kecil, lalu potong masing-masing menjadi dua.
- Potong kecil-kecil sampai habis; taburi tepung tapioka kalau mulai lengket.
- Ambil satu potongan kecil, lalu gulung memanjang menggunakan pangkal ibu jari.
- Letakkan hasilnya di piring dan lanjutkan sampai adonannya habis.
- Didihkan air di panci, dan siapkan juga baskom berisi banyak air matang untuk merendam.
- Bagi ciam bie ie menjadi tiga batch, lalu saring dulu kelebihan tepungnya.
- Segera masukkan ke air mendidih setelah disaring, karena kalau didiamkan akan saling menempel.
- Masak sampai mengapung, tandanya sudah matang.
- Angkat dan tiriskan, lalu langsung celupkan ke wadah air matang dan aduk sebentar.
- Tiriskan sampai kering dari air, lalu pindahkan ke wadah bersih.
- Tambahkan 1 sdt minyak sayur dan aduk sampai terbalur rata supaya tidak saling lengket.
- Kalau masih banyak tepung yang menempel, rendam dua kali dengan memindahkannya ke wadah air kedua.
- Setelah rendaman terakhir, tambahkan lagi 1 sdt minyak sayur dan aduk sampai rata.
- Kemas menjadi dua bungkus masing-masing sekitar 400 gr untuk sekali masak.

- Set a non stick pan on the counter, not on the stove, and mix 200 g rice flour, 15 g tapioca starch and 1/2 tsp salt, stirring briefly.
- Pour in 450 ml room temperature water a little at a time, whisking until evenly combined.
- Put the pan on the stove over medium low heat, then cook while stirring constantly, never leaving it unattended.
- Keep stirring until the batter starts gathering on the spatula.
- Turn the heat down to the very lowest flame, then stir quickly right down to the base of the pan so the bottom does not scorch.
- Stir until the dough forms one mass and nothing is stuck to the pan.
- Scatter 30 g tapioca starch over your work surface, then turn the hot dough out onto it.
- Knead until smooth and all the tapioca starch is absorbed; wear thick gloves if you cannot handle the heat.
- Have extra tapioca starch ready to dust your palms so the dough does not stick.
- Roll the dough into a log, then divide it into six pieces.
- Take one piece and keep the rest covered so they do not dry out.
- Roll it into a log, then cut it in half so it is not too long.
- Roll each half again into a long thin rope, then cut each one in half.
- Cut the ropes into small pieces until they are all done; dust with tapioca starch if they start sticking.
- Take one small piece and roll it out lengthwise using the base of your thumb.
- Put each shaped piece on a plate and carry on until all the dough is used.
- Bring a pot of water to the boil, and get a basin of plenty of cooled boiled water ready for soaking.
- Divide the ciam bie ie into three batches and sieve off any excess starch first.
- Drop them into the boiling water straight after sieving, because they stick together if left standing.
- Cook until they float, which means they are done.
- Lift them out and drain, then plunge them straight into the basin of water and stir briefly.
- Drain them well, then move them to a clean bowl.
- Add 1 tsp vegetable oil and toss until coated so they do not stick to each other.
- If a lot of starch is still clinging, soak them a second time by moving them into a second basin of water.
- After the final soak, add another 1 tsp vegetable oil and toss until evenly coated.
- Pack into two portions of about 400 g each, one portion per cooking.
