Sturdy, Crisp and Glossy Nastar Pineapple Tarts

Steps

  1. Portion the pineapple jam into pieces of about 12 g, roughly 1/2 tbsp, then roll them into balls.
  2. To stop the jam sticking as you roll it, freeze it overnight first, or wear gloves while shaping.
  3. Combine 100 g butter and 100 g margarine in equal parts, as the margarine gives the shell more structure.
  4. Add 40 g granulated sugar; using granulated rather than icing sugar gives the shell a crunchy bite.
  5. Beat with a whisk until slightly pale, no mixer needed unless you are making a big batch.
  6. Add 1 egg yolk and half of the egg white, which also helps make the shell sturdier, then mix well.
  7. Add 20 g cornstarch and the flour gradually rather than all at once.
  8. Work in the remaining flour bit by bit if the dough still needs it.
  9. Carry on mixing by hand so you can feel the texture of the dough.
  10. Stop adding flour once the dough no longer sticks, is not too soft, and is not so dry that it becomes hard to shape.
  11. Weigh the dough into 18 g pieces so all the tarts come out the same size.
  12. Roll each piece into a ball, then make a hollow in the centre with your thumb.
  13. Add the pineapple jam filling, then seal it closed.
  14. Roll it round again until the surface is smooth.
  15. Shape it into the leaf design shown in the video.
  16. Bake at 140 degrees Celsius with top and bottom heat for 45 minutes or until done.
  17. At the 30 minute mark, check the underside; a light golden colour means they are almost ready.
  18. Take them out of the oven and wait until they are warm rather than hot.
  19. Make the glaze by mixing 3 egg yolks, 1 tsp vegetable oil and 1/2 tsp condensed milk, stirring with a spoon.
  20. Brush the glaze over the tarts using a soft bristled brush.
  21. Brush a second coat for a deeper, prettier colour.
  22. Bake again at 130 degrees Celsius using top heat only, on the highest rack.
  23. Once out of the oven, sweep the tops lightly with the soft brush.
  24. Store in a tightly sealed jar to keep them crisp, or wrap them individually in gift bags.
