TERNYATA BEGINI CARA AGAR RASA CENDOL GAK PAHIT‼️

Natural Pandan Cendol, No Bitter Aftertaste

Steps

  1. For the coconut sauce, put 300 ml instant coconut milk, 200 ml water and 1/3 tsp salt in a saucepan.
  2. Cook over medium low heat while stirring, then set it aside.
  3. For the palm sugar syrup, put 200 g palm sugar, 50 g granulated sugar, 2 pandan leaves and 100 ml water in a saucepan.
  4. Cook until it boils and the sugar dissolves.
  5. Pour it into a container through a strainer so no grit gets through.
  6. Snip 80 to 100 g of pandan leaves into small pieces.
  7. Put some of the leaves into a blender, add 500 ml water, then blend until fine, feeding in the rest of the leaves as you go.
  8. Strain the blended pandan; you should get about 450 ml.
  9. Pour the pandan water into a jar, then refrigerate it for 24 hours so the cendol will not taste bitter.
  10. After a day the pandan extract will have settled at the bottom; pour off and reserve the clearer water on top.
  11. Put the settled pandan extract into a measuring jug, then top it up with water to reach 650 ml.
  12. Get the cendol press and a large bowl of ice water ready before you start cooking the batter.
  13. Combine 70 g rice flour, 30 g mung bean flour, 1.5 tbsp sugar, 1/3 tsp salt and 1 packet of plain jelly powder.
  14. Mix the dry ingredients first so they do not clump, then pour in the pandan water gradually while stirring until smooth.
  15. Cook over low heat, stirring constantly without stopping.
  16. Once the mixture is cooked and thick, turn off the heat.
  17. Move it into the press straight away, because it keeps thickening and gets harder to press.
  18. Press the cendol directly into the bowl of ice water.
  19. After it has sat briefly in the ice water, lift it out and move it to another container.
  20. Serve over ice with palm sugar syrup, plenty of cendol, and the coconut sauce poured over.
