Ingredients

Steps

  1. Put 250 g high-protein wheat flour, 20 g milk powder, 30 g powdered sugar, 2 egg yolks, 1 tsp instant yeast, and 115 ml warm water into a bowl, then stir until evenly combined.
  2. Add 1 tsp chocolate paste if you want chocolate-flavored roti sisir, then stir again until evenly combined.
  3. Carry on kneading by hand, and if the dough feels too dry add warm water a little at a time, one tablespoon at a time.
  4. Add 30 g margarine and a little salt, then knead until the margarine is fully worked into the dough.
  5. Add 1/2 tsp emulsifier so the bread stays soft for days, then knead again until evenly combined.
  6. Round the dough, return it to the bowl, cover with plastic wrap, then let it rest 40 to 60 minutes until doubled in size.
  7. Punch down and deflate the dough so the trapped air escapes, then round it again.
  8. Divide the dough into 12 portions of about 40 g each.
  9. Round each portion neatly and line them up in order.
  10. Roll out the first portion with a rolling pin, fold both sides in, then flatten the edges.
  11. Place the shaped dough into a tin greased with margarine.
  12. Cover the dough with a clean cloth and let it rest for about 30 minutes until risen.
  13. Brush the surface of the dough thinly with liquid milk.
  14. Preheat the oven for about 10 minutes, then bake on the bottom rack at 180 degrees Celsius with top and bottom heat for about 20 minutes until golden brown.
  15. While still hot, brush the top of the bread with margarine so it looks glossy.
  16. Turn the bread out of the tin, let it cool to warm, then serve spread with margarine and sprinkled with chocolate sprinkles if you like.
